Baking for Diabetics?

QUICK BREAD RECIPE

Musings from The Armchair Chef ~

Banana Bread is a staple American treat. It first appeared in the 1930s with the popularization of baking soda and baking powder. I would imagine that as transportation improved, a ready supply of bananas also contributed to its popularity. ;-)

There is a recipe for Banana Bread in in Pillsbury's 1933 Balanced Recipes cookbook. (I'll have to add this to my *try and find* cookbook list!)

Interestingly enough, I have a copy of the1917 Ryzon Baking Book, featuring *Ryzon- The Perfect Baking Powder* and it doesn't have a Banana Bread recipe...

I prefer slightly green bananas so Banana Bread is perfect for the leftovers! *VeryBigGrin*

BANANA BREAD
This banana bread is moist and delicious with loads of banana flavor and it is GREAT toasted!
Ingredients
● 2 cups all-purpose flour
● 1 teaspoon baking soda
● 1/4 teaspoon salt
● 1/2 cup butter
● 3/4 cup brown sugar
● 2 eggs, beaten
● 2 1/3 cups mashed overripe bananas
Equipment
Large Mixing Bowl
Medium Mixing Bowl
Small Mixing Bowl
Measuring cups
Measuring spoons
Mixing Spoon
Fork for Mashing
One 9x5 inch loaf pan
Wire cooling rack
Step by Step
● Preheat oven to 350 degrees F
● Lightly grease a 9x5 inch loaf pan
● In a small mixing bowl, mash bananas
● In a large bowl, combine flour, baking soda and salt
● In a separate bowl, cream together butter and brown sugar.
● Stir in eggs and mashed bananas until well blended
● Stir banana mixture into flour mixture; stir just to moisten
● Pour batter into prepared loaf pan
● Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean
● Let bread cool in pan for 10 minutes, then turn out onto a wire rack
● Enjoy!
