Baking for Diabetics?

MUFFIN RECIPES

Musings from The Armchair Chef ~

Cheese and Pepper Muffins have Red Pepper flakes adding both a visual kick and a taste kick. Add to that the experience of warm butter dripping off of HOT, fresh muffins and you can't go wrong!

CHEESE AND PEPPER MUFFINS
Cheese and Pepper Muffins, with a big bowl of homemade *Cream of Potato* soup (one of my best known culinary achievements)...enjoyed in a warm kitchen on a snowy day...
This can also be made as a Mix, layered in a jar and given as a gift!
See instructions below.
Ingredients
Muffin Mix in Jar
 2 1/2 cups all-purpose flour
 1/4 cup yellow cornmeal
 1/4 cup sugar
 1 tablespoon baking powder
 1 teaspoon baking soda
 1/2 teaspoon salt
 1/4 teaspoon red pepper
 1/2 cup grated Parmesan cheese
 1/3 cup cultured buttermilk powder
 1 tablespoon dried shredded green onion
Added later
 1 1/2 teaspoons dried red pepper flakes
 2 eggs
 1 1/2 c. water
 1/4 c. vegetable oil
Equipment
Large Mixing Bowl
Small Mixing Bowl
Measuring cups
Measuring spoons
Rubber Spatula
Muffin pan
Muffin papers
Step by Step
Preheat oven to 400 degrees F
 In a large bowl, mix dry ingredients well (labeled Muffin Mix in Ingredient list))
 Make a well in center of mixture of dry ingredients.
 In a small bowl, combine eggs,
water and oil,
 add to dry ingredients in the well, stirring just until moistened.
 Spoon into
greased muffin pans, filling 3/4 full.
 Bake at 400 degrees for 20 minutes.
 Remove
from pan immediately.
 Enjoy!  
Instructions for Gift Jar
Use a large mouth quart jar. Place Muffin Mix in jar. Place 8" x 8" square of decorative cloth over closed lid with rubber band.
Attach Tag with instructions.

Instructions for Tag:
2 eggs
1 1/2 c. water
1/4 c. vegetable oil
Place muffin mix in a large bowl; make a well in center of mixture. Combine eggs,
water and oil, add to dry ingredients, stirring just until moistened. Spoon into
greased muffin pans, filling 3/4 full. Bake at 400 degrees for 20 minutes. Remove
from pan immediately. Yield: 2 dozen.
