What is a Biscuit? Well, as I started my research, I discovered
that this simple question actually wasn't a simple question...
sigh...
The reality is the the word *biscuit* means different things in
different countries AND in different contexts! The word biscuit is
used in a non-food reference in woodworking as a joinery technique (not
unfamiliar to me but not applicable until I can afford the house
with room for the woodworking shop that I covet! LOL)
So... what is MY criteria? Well, since *TheArmchairChef.com* is about
the food I love or am fascinated by, I decided that for my purposes,
a *Biscuit* is what I would choose to bake myself!
Definition: a Biscuit is a small round bread leavened with
baking-powder or soda.
I was lucky enough to inherit my grandmother's biscuit cutter. There
are about 8 of them in varying sizes and they live in a special tin.
They are one of my most cherished possessions! ;-)
Interestingly enough, a good general biscuit recipe can be used to
make many things.

| This is an EXTREMELY versatile mix that
can be used to make everything from Biscuits to Pancakes
or Waffles to Dumpling to Cornbread to Cake to... well,
you get the idea. You'll be seeing it on many of my
Baking and Cooking sites, so start looking for a
wonderful large jar or canister to store it in, because
I predict that you'll be using it a LOT! |

Ingredients |
● 9 cups sifted
all-purpose flour
● 1/3 cup baking powder
● 1 tablespoon salt
● 2 teaspoons cream of tartar
● 4 tablespoons granulated
sugar
● 2 1/2 cups nonfat dry milk
solids
● 2 cups shortening (which does
not
require refrigeration) |

| Step by Step |
●Sift together flour,
baking powder, salt, cream of tartar and sugar three
times.
●Add dry milk.
●Mix well.
●Cut in shortening with pastry blender until mixture
looks like cornmeal.
●Store in covered container at room temperature.
NOTE: Measure the *Can Do ALMOST Anything Baking Mix* by piling it lightly into cup and leveling it off with a table
knife. |
